Bacon Wrapped Jalapeno

12 Jalapeno Peppers


8 oz Cream Cheese

12-24 slices Thin Bacon
Preheat oven to 400 degrees. Cover bottom of a baking sheet with foil. Place wire rack over foil and set aside. Wash peppers and cut stem end off. Carefully slice each jalapeno in half, lengthwise. Use a spoon to scrape out seeds and membranes. Be sure to wear gloves or wash hands immediately after handling peppers. Stuff each jalapeno half with equal amount of cream cheese. Cut slices of bacon in half for small peppers or else wrap bacon around large peppers. Wrap tightly around each stuffed pepper half. Place bacon wrapped jalapenos on wire rack. Bake 20-25 min or until desired bacon doneness. For extra flavor, use strawberry or pineapple flavored cream cheese.
